Pesto is one of the most well-known sauces on the planet. The first formula calls for seven fixings, no more, no more minor: basil, extra-virgin olive oil, pine nuts, Parmesan cheddar, pecorino cheddar, salt, and garlic. We went to Genoa, Italy, where pesto was imagined, to meet Roberto Panizza, proprietor of Pesto Rossi and the eatery Il Genovese, and discover what makes every one of the seven fixings so particularly Genovese.
